The History of Lebanese Cuisine
Lebanon culinary tradition is shaped by multiple factors that have unfolded over thousands of years in the Eastern Mediterranean, otherwise known at the Levant. The country has seen its share of foreign rulers, from Egyptians and Persians to the Romans and even the French. Lebanon was not an independent country until 1943 and the lasting legacy of international oversight has rubbed off on its culinary ways.
What ended up on the table was an ever-evolving mix of longstanding customs and new dishes offered by the powers that be. The Ottomans introduced Lebanon to lamb while the French prescribed pastries like flan and croissants. Meanwhile, core dishes like flatbread, hummus, and various riffs on shawarma persisted as the backdrop of Lebanon’s decidedly eclectic table.
The Regions of Lebanese Cuisine
Keep in mind that Lebanon is quite small, but that doesn’t mean there isn’t regionality associated with its cooking. Much of the country resides along the Mediterranean coast, meaning ample seafood options and a warm climate that’s inviting for olive trees and fruit orchards alike.
Inland, it’s quite mountainous, full of foothills, peaks, and fertile lowland valleys. Here, you’ll find a lot of the livestock and produce that goes into the culinary scene. Generally, the southern stretch of the country is synonymous with kibbeh, a classic and comforting dish made from beef, bulgur wheat, pine nuts, mint leaves, and other spices. The northern part is more widely known for its sweets while meat pastries are very popular in the agricultural eastern wing of Lebanon.

About The Founders
The Lebanese Factory was founded by Ankur Singhal & Prateek Gupta in 2021 when the world had just started recovering from Covid-19 pandemic. During these turbulent times the long-time friends Ankur & Prateek who both lived in Faridabad noticed that the suburban city of Faridabad did not have any authentic Lebanese restaurants, and while there were a lot of Shawarma Lovers among their friends & family, everyone used to frequent Lebanese joints in posh South-Delhi localities which were at least 25-30 Kms away from their homes. Excited by the prospect of finding a gap in supply & demand matrix, both decided to take up the opportunity and open up an authentic Lebanese restaurant in Faridabad.
While Ankur was an seasoned f&b industry stalwart who started his culinary career as a restauranteur, with Brands like Tandoori Café, The Kathi’s, Koyla Kabab & Depaul’s Coffee at the famed GK-II M-Block & Vasant Kunj markets in the early 2000’s. His love of food and cooking became an obsession as he was exposed to various cuisines and catering to premium South-Delhi crowd and their tastebuds, Prateek was a seasoned industrialist with more than 20+ years in building businesses from the ground up. Together during discussions about life & business in the pandemic of 2020, they had an idea of starting a venture together where Prateek noted that he loved Lebanese Cuisine and how he was craving for a shawarma and was unable to go to south-Delhi to have one during lockdown, from where the idea of The Lebanese Factory was born.
